I can answer about why chains are dogshit in india.
Almost all are running out of cloud kitchens and have nothing of value to offer including taste and reliable consistency, or are legacy big brands so nothing other than consistency and general hygiene in the kitchen can be expected and are not worth visiting every time you wanna have good indian food, or you can luck out and find smaller locations that quickly get bought out by larger chains backed by PE and go to shit faster than that taco can slide out of your asshole leaving a bloody trail in its wake
Few places do indian food well, and you gotta experiment and hope for the best in terms of proper hygiene and how good the food tastes
As for their presence in america, I doubt the demand for it at the prices it gets served to you all is feasible for a large chain restaurant to operate profitably
I don't know much about the back end enough in american fast food chains to make a concrete guess tho
