French Vanilla contains egg yolks, which is why it's more yellow and tastes richer and a bit like custard. Provided you've got actual French Vanilla and not "French Vanilla flavored" ice cream or whatever, where they were too cheap to actually put in eggs.

In general, french vanilla will have more vanilla and more sugar than standard vanilla. In the case of icecream, french vanilla will most commonly be made with a custard base to further differentiate it from basic vanilla.

people with brain cells will infer that yellow refers to the ingredient that gives the ice cream its yellow pigmentation rather than the literal taste of a color. since you are on a cooking board you should know what ingredient that is without it being explained to you.
