i've tried recipes like these several times but no matter what i did - soaking the peas overnight, cooking them for 3 hours, not adding salt to the cooking water - the peas always came out disgustingly hard

lobster legs, seriously? Those will do nothing but suck up the cooking liquid. Utter garbage.
When making bean soups, the magic word is 'trinity,' specifically 1) onion, 2) celery 3) bell pepper. In your world, it may be sofrito, or maybe mirepoix. You wasted your chicken stock on flavorless garbage. You're going to need a lot of hot sauce.
