Ivy's Reserve Somerset Red Cheese is the best red cheddar I've had, and amongst the best cheddars I've had. Really was quite spectacular, though I prefer white and more aged cheddars, the ones with the cheese crystals that make them crumbly and a bit crunchy

Cheddar is only good for cooking, Gouda is edible on its own.

Anything labelled like OPs pic. is obviously made for the American market as Irish cheddar is considered - Meh, ( nothing special) in the rest of the UK.
I don't know where you are from, so it's hard to say if you can get the good stuff or not, but remember what Americans call 'Sharp' the British call 'Mature' . . . .Vintage is one step above this.

my parents sent me a gift basket with a block of 1 year cheddar in it and I left it in my fridge for 2 more years because I didn't know what to do with it. when I finally tried to use it for something it was full of crystals and so strong it completely overpowered everything else. I have a second block that's like 7 years old at this point that I'm afraid to even unwrap.
