i think pavlova is the easiest crowd pleaser dessert to make that depending on the country is not that popular (atleast in canada america)
maybe australia and newzealand it is.
uk their idea of pavlova is either soggy or dehydrated
a large size fresh pavlova has a nice chew to the centre. just top with whipped cream and some sliced berries

its just making a giant meringue to use as a cake and not overcookign it
