It's just a gritty, bitter, burning powder. I don't understand why it is held up as such a platonic pairing with something like salt. It's incomprehensible to me.

Yeah I heard that too. Apparently it was King Louis XIV. Some sources say it was because he was a picky eater and just salt and pepper were what he liked, or that he had stomach issues and pepper was what he tolerated. But I read it was also common around that time for wealthy people to show off by overusing expensive spices to the point where food probably tasted bad.
In some places salt and cumin are the typical things on tables instead of salt and pepper.
