Are potatos the only satisfying chip to eat? Every once in a while I try some novelty chips from stores like sweet potatos, carrots, beets, parsnips, etc and they are never what i would call "good". I eat a couple, think "not bad", and then have no desire to eat anymore because its kinda not good and shit.

They're not "the only" good ones. Taro Nets are also delicious but not common in the west. They're made from taro/eddo root (no, not the purple thing you think is taro; it's not and I have no idea why people keep calling it that), which behaves shockingly similar to potato in all respects. Sweet "potato", carrots, beetroot etc do not.

I finally got around to trying making mashed potatoes out of potato chips today and I gotta say it was damn good. I used Lay's sour cream and cheddar crushed up into flakes. The texture and consistency were very satisfying and the flavor was great
