Easy and cheap thing I do is just get bone in chicken thighs with skin, marinate them and throw some herbs on it. Cook it skin side down first, then flip it after 15 minutes or so. Cook some rice, pasta or whatever. Boil or bake vegetables of your choice, maybe a sauce on the side. You can do the chicken in an air fryer too if you have one. Super basic but turns out great every time.

I use a little bit of avocado oil and a splash of balsamic vinegar, salt, black pepper and then whatever herbs I feel like. If I want to go more european or Asian etc I toss in whatever fits. Garlic, herbes de provance, asian would be ginger and some sesame oil instead etc. It just depends on what mood I'm in. You can just experiment

I cook Taco Bell quality meals at home seven nights a week and you can too, and for only a few dollars. Just buy whatever burrito fillings you like and a shitload of tortillas. Your new diet requires 24 to 32 large tortillas per week. Wala. Even ask your local TB for a few bags and wrappers and dress up your homemades to feel more authentic. Serve them to your friends and family and see if they notice. You can buy TB brand seasoning at Walmart.

Meat, fruit/berries, homemade sourdough bread and other baked goods (to make healthy versions of slop food to satisfy cravings).
Thats a great foundation, then you can supplement with quality whole foods both plant and animal based.

Stir-fries are incredibly easy, just a protein and some veggies and a sauce that you can look up or just buy
If your area has decently priced ground beef start learning how to make good burgers or "tacos" or a pasta sauce
Speaking of pasta, bum cacio e pepe is a great cheap meal, just pasta cooked with butter (fuck you I said bum), cheese, and pepper.
