How do you handle interruptions while cooking? Often you can’t just ‘stop cooking,’ usually things are time sensitive.

Just take your shit off the heat, or turn the heat down if you're only going to be a few minutes. Most stuff will be fine. Boiled eggs are probably one of the very few exceptions where stopping the cooking process might mess things up, but the chances that you're boiling eggs AND have an emergency so bad it pulls you away from the stove immediately, are so low that it's not really a situation worth preparing for. In that case, probably just eat the loss and suck it up, a couple eggs isn't worth crying over. Or just pull them from the heat a few minutes early and eat soft boiled eggs instead.

That's a stupid suggestion, the heat doesn't just stop because you turned the burner down. If we're staying in OPs premise, there's still an element of managing how to finish the eggs.
