I have an unusual assortment of ingredients that I think have the potential to make a very good noodle soup. Do you guys have any suggestion for potential combinations? Bonus points for complimentary toppings.
- baked fish drippings
- light vegetable stock
- beet kvass
- gherkin brine
- nutritional yeast
- homemade chili paste
- chili oil
- dark soy sauce
- unfiltered cider vinegar
- dried mushrooms
- dried shrimp kimchi brine

I think I’d go vegetable stock, fish drippings, shrimp kimchi brine, soy sauce, and chili oil for the base

That's what I went with, with some leftover flat pasta, didn't have any sort of specialty noodles on hand.
The beet kvass and the dried mushrooms did a lot of the heavy lifting. It lacked the body of a good meat broth but made up with depth and freshness.

I considered making something based on the drippings, they would probably have made a very nice soup but they got turned into a sauce last night instead.
