I call evil wife "arm-chan" cause it's quick and easy compared to saying "Ibaraki-douji's arm", though she can also be called Kagekasen/Shadow Kasen.
Generally you can go ahead with a few different ones though, but the only one she canonically has is her title "Ibarakasen" or "rose-flower hermit", there's an even shorter nickname that's just "Kasen" with different kanji, becoming "flower hermit"
Oni wife is just called Ibaraki-douji, but I usually just use her normal name. Guess you can call her Onikasen.
There's actually a lot of folk and lingustic lore going into it, given how fluid Touhou's lore is there's a chance she might even be one of the Eight Taoist Immortals who has a similar name to her.

Its called Dojigiri Yasutsuna, its known as one of the Tenka-Goken(five swords under heaven) and its considered the best japanese sword ever made, it has even been in the hands of the three great unifiers of Japan at one point in their lives.

She technically has two. Her gauntlet blade (the default one is called the Blood Blade) is suited to her combat style because it's lightweight and allows for fast, acrobatic attacks that she can easily mix into her flips and kicks. At one point Rokurou comments on her fighting style and mentions that she has really solid fundamentals, especially for someone who is self-taught (although that isn't technically true, Artorius trained her, she just doesn't want to admit that because she fucking hates him).
Her therion claw is the result of daemons nesting in her severed left arm, and she can use it to "therionize" daemons (or humans) and get a buff depending on the type of enemy she uses it on, as well as a general power increase. Her health constantly goes down when she pulls it out and she can't be staggered by enemy attacks, so she can just go ham without really thinking about it.

She uses a UMP45 as her signature weapon. The specific “elite weapon” make she uses is called “Schlitzohr” which apparently is German for a sly fox or some other form of cunning and mischievous person, which perfectly summarizes her personality. The weapon increases her electric damage dealt on attacks
