You won't see the starter evolutions until after the game is out, they usually reveal them a little bit after release nowadays. Which is a bit unfortunate since the surprise is cancelled out by how bad they often are, so it just leads to people picking something and being disappointed when it turns out completely different from what they hoped (usually by just turning into a man), rather than being able to pick a starter based on which final form they like (or the final forms staying true to the base)
