Why are Gilgamesh's defenses and reflexes so much better in Strange Fake than in Stay Night?
In Fate/Stay Night, he pretty much always lost because he was either too cocky, or his enemies caught him off guard.
Saber for example caught him off guard by hiding and Avalon to dodge EA and then stepping out of Avalon to hit Gilgamesh before he could charge up EA again.
Shirou beat Gilgamesh by overwhelm him with UBW spam. And while yes, UBW spam is supposed to be faster, Shirou STILL closed the distance between him and Gilgamesh on foot. Then Shirou OVERWHELMED Gilgamesh in melee combat, even going as far as to chop of Gilgamesh's arm before he could draw EA.
Then in Heaven's Feel, Sakura catches Gilgamesh off with an attack from fhe shadow in his blind spot.
And yet in Strange Fake, Gilgamesh can react to Richard Lionheart and even drive him back in melee combat. And he has automatic shields that can let him block attacks aimed at him and Tine with his back turned. And he can block Alcides' arrows with shields before the arrows even get close to him. And he can effortlessly parry thousands of attacks from Enkidu like every second.

The portrayal of characters tend to differ between mediums. With anime and manga generally being flashier than the VNs.
Even though the characters aren't stronger from a narrative standpoint. This is why you get some silly stories from Fate fans claiming Servants were buffed post-FSN when that's never been a thing. That's why Narita stated the FSF Servants can be defeated by the FSN ones even though the capabilities of the FSN Servants never changed from a narrative standpoint.
The DAA are different. They were buffed to be world-class calamities post Remake because that's their position within the narrative, with even their weakest Fate incarnations being relative to Gods. While Servants have stayed the same because their position within the narrative never changed.
