I recently and an idea because I love shepherd's pie but my oven broke and I haven't replaced it yet. So I used shepherd's pie filling as pasta sauce.
I mostly used one of Gordon Ramsey's recipe as inspiration:
>put minced lamb or beef into a cold, deep pan and put it on high (1lb or 500g)
>grate an onion and a large carrot on a cheese grater
>wait until the mince browns at the bottom
>turn heat to medium
>put in vegetables
>keep stirring while browning (5-10 minutes)
>put in tomato paste (1-2 heaping tablespoons)
>keep stirring and browning (5-10 minutes)
>white wine to deglaze (1-2 cups)
>bullion or stock (1-2 cups)
>Worcester sauce (2-5 tablespoons)
>a good helping of spices to taste: garlic, Mediterranean herbs, mustard or ground mustard seeds, maybe salt
>peas, either frozen or canned (5-6oz or 140-180g)
>let simmer softly (at least 30 minutes)
>make noodles or potatoes or mashed potatoes
>garnish with cheddar and maybe chives
>serve

But seems over complicated.
Some people don't add peas and carrots to cottage pie, I add a few peas but I don't do carrot.
I don't add stock - no need, or tomato puree . . no white wine and none of this ' a good helping of spices to taste: garlic, Mediterranean herbs, mustard or ground mustard seeds' !
OK to add an OXO cube or a spoonful of Marmite or Bovril.
It's a decent mince mix and it works well, you can top it with mash to serve -You don't need an oven to finish it but it also works well with plain boiled potatoes or in your case pasta.
I tend to add a lot of black pepper but that's just me.

I agree. I just like meal prepping. I basically keep the filling all week like a sauce and make noodles in less than 15 minutes on the spot.
I used to use those IKEA glass containers like small one-portion casseroles before my oven broke. I'll have to get it fixed soon. I miss my roasts and bread.

What I was getting at is to keep things simple, there is a lot to be said for that.
Adding tomato puree, Mediterranean herbs, garlic and wine just turns it into a poor quality Ragu.
It's just my take on it.
