To be fair, most of that syntax is down to what ffmpeg wants to see. The only thing in that block that is specific to the Windows Powershell language are the + to concatenate substrings and the $ to evaluate variables. Not any prettier in the corresponding Linux version.
Now, the real problem here was that it demands $($var) if we want to put in var as a string, and complains about $var because that only evaluates to a number.

Well, one way is to not downscale the output quite as much. There's these lines near the top:
>$scaleSize_x = 436
>$scaleSize_y = 320
And if you make those values larger, the output files will all get larger too. Of course, you should try to keep the ratio between x and y the same as it was in the input video to avoid stretching.
Then you can change the bitrate to be higher, both in the output and the intermediary files.
The line
>$out_bitRates = @("2M","2M","2M","2M","2M","2M","2M","2M","2M")
lists all nine intermediary bitrates. 4M or even more gives you more to work with than 2M.
Then, further down in the file, you'll find the bitrate for the output file:

You can also choose some higher value here, but be aware that this directly effects the filesize of the final collage.

The script also uses the height as an offset for the composition step though. So you need the value outside of just the rescale. Of course, if you can get the original size of the input video, it's not too hard to just automatically set the height to the corresponding value. Something like

rather than setting both manually should do the trick. I'm too lazy how to look up the width and height of an input video with ffmpeg though.

I watched this Crime & Punishment ripoff from the 1940s the other day where the whole movie is a college student kills his professor for money and then tries to escape the law.
In the end it turns out it was all a dream, the professor that he killed in his dream writes him a cheque, and the girl he was in cahoots with in-dream he meets "for the first time" and they go for a date and it was just so lame and made the whole movie redundant and it made me think maybe audiences liked this kind of ending where they get to experience a thrill but they also get to go home happy, but I suppose it's just confirmation bias on my end

From what I've seen of them, they have like a dozen different actresses for their main roles, half of them decent (or at least cute enough for me to not notice) and the other half abysmal. They also have maybe five different actors for their love interests, and they're all terrible. It also seems like they have only one single writer and no more than a handful of directors. Which means that not only are those romcoms terrible films, but they're also all basically the same plot, with the same pool of actors, filmed in a similar way. At some point, it's gotta get boring if you keep watching those.
