There's a bunch of theories, which mostly seem to centre on the fact that Book Stannis doesn't seem to have known about the shadow assassin for Renly (given he seems to initially believe it was Brienne and is confused about having dreamt himself as the assassin/seems to be theorising the actual result to Davos and guilty about it). Combine this with the fact he's meant to be the best battlefield command in Westeros and the fact he did have a plan for the other shadow assassin in the books (against Penrose and having Davos get Mel under the walls), it's out of character for him not to have planned some way to beat Renly that he felt gave him a reasonable chance of victory.

The theory I ascribe to is the one that ties into the Battle on the Ice (book Battle of the Bastards equivalent in a way) that would be in Winds if it ever came out, Stannis is going to do something like the IRL Battle on the Ice (bait his enemy onto a frozen lake they'll break through and drown in) and specifically do it by relying on the main way to see his camp in the blizzard being the central bonfire. Thus he instead builds a separate bonfire on an island in the lake to burn Theon on and this both acts to draw the Bolton-Frey force onto the lake and also flashbang them in the process when the burning of 'king's blood' overcharges it.

With the theory being this is him reusing part of his plan from Storm's End, which was to form up in front of the castle before the dawn and let Renly cavalry charge him (Renly doesn't have his infantry present, so only has his 20k odd cavalry), with the safe bet Renly will be leading said charge from the front. Then he pulls out his fake Lightbringer and the light from the burning sword blinds the Reach knights and allows his infantry to pull them down into the mud and slaughter them Agincourt style (or in a reversal of Gandalf's move at Helm's Deep, it's just the infantry blinding the cavalry instead of the reverse)

Tl;dr: Stannis was relying on Renly being confident enough to lead a cavalry charge straight at his outnumbered infantry at the break of dawn (which Renly basically outright says he'll do right before being shadow'd, though he may have been smart enough to let Loras lead the first charge instead of risking himself) and use Lightbringer to blind them. Result is not necessarily all of Renly's cavalry being defeated (just the first wave), but the defeat of said element being total and presumably resulting in Renly being killed or captured (which'd also explain Stannis feeling guilty he was assassinated, if his plan involved him possibly being captured).
