Anyone ever dated someone who was constantly trying to reinvent him/herself in their 30s? Is trying to be a source of stability in their life a bad idea?

I've been dating this girl for a little over half a year who's really sweet and warm, except her life is kind of a mess. But instead of trying to fix it, she seems like she's always tried/trying to distract herself with travel or new hobbies or short term life changes that never really pan out.
