I don't think so, at least I haven't heard anyone mention that coffee suddenly flowing faster at the narrow part connecting both chambers is doing something to affect flavor—the Chemex also does that. The main difference with the Chemex is that it has both the small hole at the back and the spout connected to the brewing chamber, so you never have the issue of filter paper sticking to the method. As for how the flow of oxygen into the brewing chamber affects the coffee as it is brewing, I have no idea

I just made a pour over that tastes sort of sour... like hot lemon drink. I don't like it. Weird thing is that I used pretty much the same recipe I always do and even the same coffee. It's not specialty coffee but it wasn't bad. I'm not sure I understand what went wrong. Could it have been the coffee itself aging that did it? It was only a few days apart

I was looking for reviews of the Makita coffee machine. And his was the pretty much the only one. He is such a soft-handed smug prick about it. Treats it like an absurd novelty. He acts like such a know-it-all, pretends he understands blue-collar worksites and can't imagine a practical use for it. His biggest complaint is battery usage. But, he used the smallest, lowest amp battery they make. Likely because it's the cheapest. And he didn't want to spend more money just to review it. But, anybody even thinking of buying that will already have a full range of Makita tools and batteries. So, it's obviously a non issue. If you understood. He also can't imagine working anywhere where it would be useful. But, like. heaps of trades work out of a van. Or in un-powered site huts. Or rural, way out in some paddock. I got one of these about 2 years ago, works fine still. Only had to recharge it twice. Only minor downside is the push button mechanism to select the speed is linear so you have to push the button to cycle through low, medium, high, off. The highest speed is really fast and will make a mess everywhere if you aren't careful so keep that in mind.

They do that by limiting the amount of regrinding happening. If grinds can't exit the burrs because there's shit in front slowing everything down, they take a few more spins and generate more breaks and fines. Some people will taste that.

MHW3 Bomber R3 is probably the best money spent right now. $120, 48mm, external adjustment, comes with 5 sifting screens, and it fits other 48mm burrs like the Kinu pourover set. Pretty sure it doesn't work with a drill tho if you were going that route.

Did you do the dry erase marker alignment process? I have one too, and the alignment is finicky, especially with the rubber mount for the burr.
Also, don't forget to check that your indicator dial stayed properly zeroed. It can move around as you turn the burrs if it's touching, and the set screw can wiggle loose a little bit.

You get what you pay for. If you're willing to fiddle with it, a DF64 is a nice step up in grind quality from the cheaper options on the market, but it's not as expensive as the "fancy" grinders. I'll probably be replacing it in the next year or two, since I have more money now and it's kind of a nuisance to be messing with it this much. I don't even know what's good right now, though, besides the EG-1, and I'm not able to piss away quite that much money.

Setting it up was the hardest part, but it's something I really wanted to do so pushed through by making lots of calls to the government to make sure all above board(may still have mistakes as they make them too when giving directions).
Learning to roast has been fun but now that I'm trying a new varietal- I'm seeing how tricky it can really be, may have messed this one up but we shall see, if anything a learning experience,
but as you pointed out- an expensive one
holy moly the upfront costs are bleak and wholesale/selling to cafe is pretty rough (especially since I'm so small- if I had bigger volumes and guaranteed buyers it'd be more viable) but starting out it's so tricky.
Trying to figure out social media to increase sales, and how to make shipping cheaper too now but those eat up an incredible amount of time, and it's not clear what will 'draw' people in to commit to buying a new brand

You don't want boiling water for instant coffee. Even 80c is a bit high. Remember, you aren't using water to brew anything, you're rehydrating the coffee grain, and the heat is only to make it easier to mix, and to provide residual heat for the actual drink.
If you only have a kettle, that is a 100c boiling temp which is well beyond, you should set the kettle to start boiling and finish about 10 minutes before you actually need and then pour the water into a cup to let it come down to temp then use it.
The best way to make instant coffee is to get a good milk frother/mixer & heater (eg the breville milk cafe, although this is expensive, it's the best, cheaper alternatives exist) that will heat milk up to between 140f (60c) to 160f (70c), some let you pick, so you can experiment. Put in your water & milk, then add the coffee & any sugar and then run the froth/heat cycle.

Update on the semi auto machine it's working good. Got some cafe umbria running through it, really beats paying $2/shot. Haven't messed with the internal grind settings but the external ones have enough movement that I can get all the grinds I want for my other brew methods.

KitchenAid is discontinuing this machine I believe (tank leak that you can fix with a tight fitting oring) so you should be able to pick it up for super cheap at discount stores. I got mine for $280 vs $599 or whatever KA was charging.

Currently drinking Amazon branded coffee. I was ordering something and saw this so I thought I'd try it.

Is it good? Not really. Just a pretty cheap instant coffee. It's drinkable but that's about it.

I do like instant coffee because it's less hassle than my french press. There are much better brands though of course - even stuff which isn't particularly expensive.

I've tried iced pourover, I quite like it as it usually comes out sweet with the lighter roasts I use. I also make iced Americanos frequently in the summer. For both, I like to use whiskey stones to cool the water and/or brew before adding ice, which reduces dilution.
I got some beans from George Howell recently that are apparently specifically roasted for cold brew, so we'll see how that goes.
